<p>Beta-glucan having improved properties is provided. This β-glucan preparation possesses a significantly higher molecular weight and viscosity than β-glucans prepared by standard means. These properties enable the β-glucan to be better resistant to enzymatic degradation, to exhibit a longer residence time in the gastrointestinal tract, and to extend the shelf life of food products to which it is added.</p> |
