摘要 PROBLEM TO BE SOLVED: To increase the additional value and effectively utilize pumpkins which do not have any remarkable utilization other than they are only boiled and seasoned for eating. SOLUTION: Pumpkins are saccharified by rice malt ('Koji') to prepare pumpkin juice. The pumpkin juice is concentrated to pumpkin syrup, further the pumpkin juice or syrup is concentrated to dryness to pumpkin sugar. Thus, the sweeteners containing effective components occurring in pumpkins are provided. In addition, the processes drawn in the figure can be provided for producing these juice, syrup and sugar of pumpkins.
