PROBLEM TO BE SOLVED: To obtain raw pastas which are preserved for a long term and also provided with the same eating feeling as that of the conventional ones even at the time of production by means of a noodle making machine by containing an ethanol and a calcined calcium. SOLUTION: The target raw pastas are obtained by containing the ethanol by more than 0.5 volume/wt.% per flour and the calcined calcium by 0.1 wt.% per flour favorably. Besides, it is preferable that the calcined calcium is the one where at least one kind selected from a group consisting of a chorion, an animal bond, an oyster shell and a coral is calcined. Moreover, the pastas are made to be macaroni, spaghetti, vermicelli and noodle. |
