A product extremely effective in health promotion which is produced from a pulse as a starting material and comprises at least one health-promotive ingredient selected among ingredients enhancing the liver function, ingredients enhancing the heart function, ingredients having an anti-inflammatory action, ingredients effective in weight reduction, antioxidant ingredients, antimutagenic ingredients, and ingredients having an intestinal action on monogastric animals; and a process for efficiently producing the product. Although the product is directly utilizable as it is, it is useful when it is modified so as to contain a specific ingredient in a high concentration or is used as a starting material for products of application such as food, livestock food, pet food, or medicinal material. Although miso and soy sauce are salt-rich foods unsuitable for general use because of the addition of salt after koji preparation and have problems concerning production efficiency due to the extremely long aging period after koji preparation, the invention enables easy production and attains a reduced cost. |
