PROBLEM TO BE SOLVED: To maintain the good taste of a boiled rice under preservation by inhibiting aging of the boiled rice in the preservation by using alkaline water and a boiled rice modifier. SOLUTION: This method for producing a boiled rice by using an alkaline water formed by electrolysis of water, and a rice modifier can improve a taste of the boiled rice and maintain the good taste of the boiled rice because the rice modifier is allowed to penetrate into the rice grains by a surface activating activities of the alkaline water.
