PROBLEM TO BE SOLVED: To obtain a protease having keratin-degrading activities, and microorganisms capable of producing the protease. SOLUTION: This protease has the following physicochemical properties: (a) action and substrate specificity: degrading casein and keratin derived from human and animal hair and having a casein-degrading activities higher than keratin-degrading activities; (b) optimum pH: showing maximum activities at an alkaline condition of pH10.0, and further showing about 60% activities at a nearly neutral condition of pH7; and (c) pH stability: hardly inactivated at pH10 after being maintained at 30 deg.C for 1hr, and having about 70% activities at pH6-9. |
