PROBLEM TO BE SOLVED: To obtain a new antioxidant substance that comprises an antioxidant substance prepared by allowing spores formed by a fungus to act on an isoflavone, shows excellent antioxidant action and is useful for prevention of aging, cancer, arteriosclerosis, hepatic disorder caused by oxidative stress. SOLUTION: Spores formed by a fungus, or hydroxylase separated from the spores are allowed to act on an isoflavone to prepare the objective novel antioxidant substance that is excellent in antioxidant action and useful for prevention of a variety of diseases as aging, cancer, arteriosclerosis, hepatic disorder caused by oxidative stress by activated oxygen. The antioxidant substance is prepared by culturing a fungus in Aspergillus, Penicillium, Rhizopus (for example, Aspergillus sydowi) in a culture medium containing soybean extract to promote the sporulation and by allowing the spores to act on isoflavone in the soybean extract. |
