Pyrolytic cleaning operation control method for cooking esp. roasting oven

The method involves an oven with a roasting compartment fitted with heating elements, a temperature sensor, a catalytic converter in or connected to the air discharge outlet, electronic control and evaluation equipment (16), and equipment for pyrolytic i.e. heat cleaning of the oven. The catalytic converter (8) has a heater (6) and a temperature sensor (7). A circuit (10) is provided which operates in conjunction with the electronic control and evaluation equipment to limit production of fumes. The circuit for limiting the fumes can have a fume sensor, an electronic evaluator to control the catalytic converter heater and a switching system to switch off the heater.
