PROBLEM TO BE SOLVED: To produce the subject enzyme for pharmaceuticals, agrochemicals, cosmetics, foods, etc., while suppressing the contamination with sundry germs by culturing a microorganism capable of producingβ-1,3-glucanase and addingβ-1,3-glucan to the medium when the sugar concentration of the medium reaches a specific level. SOLUTION: A microorganism capable of producingβ-1,3-glucanase [e.g. Streptomyces matensis DIC-108 (FERM BP-253)] is cultured in a medium. When the concentration of residual dissolved assimilable sugar reaches <=1.0%,β-1,3- glucan (e.g. curdlan) is added to the medium and the culture of the microorganism is continued to obtain the objectiveβ-1,3-glucanase composed of a laminaripentaose-producing enzyme, etc., and useful in the field of pharmaceuticals, agrochemicals, cosmetics and foods in high productivity while preventing the contamination with sundry germs and shortening the necessary culture time. |
