The salami mixture is extruded from a storage tank, through a filling tube. The gut, forming the skin of the salami is placed on the fillings tube, one end already tied of. The skin is pushed off the filling tube, and when the required length is full, its inner end is also tied off. The complete rods of salami are then smoked and aged. |
