PROBLEM TO BE SOLVED: To provide a method for effectively producing L-aspartic acid useful for food, infusion, etc., by reacting maleic acid with NH3 in the presence of a fatty acid, etc., in the presence of a microorganism having maleic acid isomerase and a microorganism having aspartase. SOLUTION: This method for producing L-aspartic acid by reacting maleic acid and ammonia in the presence of a microorganism having maleic acid isomerase activities (e.g. Alcaligenes faecalis IFO 12669) or a treated material thereof, and a microorganism having aspartase activities (e.g. Brevibacterium flavum AB-41 strain) or a treated material thereof is performed in the presence of a 1-8C saturated fatty acid such as formic acid, acetic acid, propionic acid, butyric acid and valeric acid, a hydroxy acid such as lactic acid, hydroxylactic acid, glycolic acid and glyceric acid, and a salt thereof to provide the objective L-aspartic acid. The L-aspartic acid useful for a food additive, infusion, etc., is effectively produced in a high yield by the enzyme method. |
