<p>A process for the immobilization of an enzyme, comprising the steps: a. selecting an amphiphilic enzyme for immobilization, b. preparing an emulsion comprising a continuous hydrophobic phase and a dispersed aqueous phase which aqueous phase contains the enzyme and material suitable to act as carrier for the enzyme when the next step is carried out, which material is partly dissolved and partly not dissolved in the aqueous phase, c. removing water from the dispersed phase until this phase turns into solid enzyme coated particles. A suitable aqueous phase may be prepared with a crude lipase fermentation liquid which includes inactivated biomass suitable to act as carrier. Processes which use the immobilized enzyme comprise ester re-arrangement, acidolysis and deacidification of edible triglyceride oils. These processes have a very low enzyme consumption.</p> |
