PROBLEM TO BE SOLVED: To stably store a liquor such as Japanese rice wine or wine for a long period by deaerating the liquor and subsequently storing the liquor. SOLUTION: This method for storing a liquor comprises passing a raw liquor through a filtration device 1, removing gaseous components contained in the raw liquor by the use of a deaeration device 2, and subsequently storing the deaerated raw liquor in a storage container 3. The deterioration of the smell, taste and color of the liquor are thereby inhibited to enable the storage of the liquor for a long period. When a cooling device is disposed on the storage container to cool the stored raw liquor to a temperature of -5 deg.C to 3 deg.C, especially approximately 0 deg.C, the raw liquor can more stably be stored for a long period. A pasteurization treatment of the raw liquor after the deaeration treatment enables to suppress the deterioration of the smell, taste and color of the raw liquor after the pasteurization treatment. |
