PROBLEM TO BE SOLVED: To obtain the compsn. which may be subjected to a thermal sterilization treatment by using sodium caseinate as an emulsification stabilizer and making combination use of gelling agents, such as agar and gelatin, and specific thickening polysaccharides. SOLUTION: A liquid A is first prepd. by adding, for example, 0.5(wt.)% starch, 5.0% sodium caseinate, 0.1% carrageenan, 0.53% calcium diphosphate and 0.045% lecithin to 75% liquid of 33.3(wt.)% sugar, stirring the mixture and heating the mixture up to 85 deg.C. Separately, a liquid B is prepd. by adding 2.0% agar to 49.525% water and heating and dissolving the mixture for 15 minutes at 95 deg.C. After the liquid A and the liquid B are mixed, 9.9% fats and oils (salad oil) are added to the mixture and the mixture is emulsified by mixing for 5 minutes at 9000rpm with a mixer. The emulsified liquid is subjected to a heat sterilization treatment (25 minutes at 120 deg.C), by which the desired compsn. is obtd. |
