PURPOSE:To obtain hardened oil with increased crystallizability and spreadability, showing good texture and melting in mouth, by formulating specific amounts of hardened oil and liquid oil at a specific ratio and allowing the mixture to contact with 1,3-specific lipase to effect ester interchange to inhibit the formation of diglycerides and trisaturated triglycerides whereby the hardened oil is modified. CONSTITUTION:100 pts.wt. of a hardened oil whose contents of palmitic acid and stearic acid are <=25wt.% and <=15wt.%, respectively and whose m.p. is 28-42 deg.C is mixed with 5-40 pts.wt. of a liquid oil whose total content of unsaturated fatty acids is >=80wt.%. The mixture is subjected to an ester interchange reaction by the content with a 1,3-sites specified lipase. Thus, the reforming of the hardened oil is achieved by suppressing the formation of diglycerides 3-saturated triglycerides. |
