Process and assembly to position lumps of dough on baking tray prior to fermentation

Preparation of bread rolls comprises allowing the prepared lumps (18) of dough to ferment and rise on a tray, and subsequently baking them upon a baking tray. The novelty is that: (a) before the lumps (18) of dough have commenced fermentation and rising, they are pre-positioned on a baking tray (17) in the positions in which they will be baked; (b) while the unmarked/uncut dough is rising, the lumps (18) are covered by an anti-stick cloth and sheet metal cover which are removed after fermentation has concluded. Also claimed is a suitable assembly.
