The oven 1, heated only with gas, combines the convection and steam methods of cooking. It comprises a forced-air turbine 6, a burner 9 enclosed in a combustion chamber 8 supplied by a gas/air mixer with fan 17, from which emerges a plurality of tubes 7 conveying the combustion fumes which inside an exchanger 26 heat the water for the generation of the steam by means of an atomizer 12 and with the collaboration of the turbine 6. The oven 1 has conduits 29, 29' which are differentiated for the evacuation of the fumes and of the water vapour, both provided with respective valves 28, 28' governed by a mode selector. An opening 32 in the cover of the combustion chamber 8 allows the hot fumes to be blown into the cooking chamber 2. <IMAGE>
