PROBLEM TO BE SOLVED: To obtain a culture medium for culturing baker's yeast, etc., excellent in bread dough-fermenting activity and bread making property by adding waste fluid from a beet sugar factory or its treated matter to blackstrap molasses or substituting a part of blackstrap molasses with waste fluid from a beet sugar factory or its treated matter. SOLUTION: The objective culture medium is obtained by adding waste fluid from a beet sugar factory and/or its treated matter to blackstrap molasses in such an amount so that the addition ratio is 1-30% based on the blackstrap molasses expressed in terms of fermenting sugar component or substituting a part of blackstrap molasses with waste fluid from a beet sugar factory and/or its treated matter in such an amount so that the substitution ratio is 5-50% based on blackstrap molasses expressed in terms of fermenting sugar component. The culture medium can improve the yield of baker's yeast biomass on sugar, invertase activity and/or maltose fermentation activity and can produce yeast belonging to Saccharomyces cerevisae such as baker's yeast having excellent bread dough-fermenting activity and/or bread making property or yeast for brewing. |
