This method is characterised in that it consists in the following: a) enclosing under vacuum the previously pickled meat slices in sealed individual packages with a certain amount of compacting; b) placing them in several moulds capable of being stacked (10); c) forming a stack of moulds (1), the meat slices being preferably subjected to mechanical compression by compacting within the stack; d) placing this stack on a support (2) capable of vibrating; e) subjecting the stack to a vibrating motion at low frequency for several hours; f) successively cooking and cooling the meat slices, bringing them successively to high and low temperatures; g) de-hacking the stack, and removing the cooked and cooled meat slices from the moulds. The invention is applicable in the food industry, and more particularly in the production of pickled meat such as ham.
