Preparation of a dry extract from liquid vinegar comprises filtering crude vinegar to give a sludge which is enriched in organic compounds, enriching the sludge with an unfiltered crude vinegar to give a vinegar which contains a higher content of active ingredients and treating this vinegar to give a dry extract.
