<p>The first invention relates to a sherbet which contains erythritol and has a soft texture; and a process for the production thereof. The second invention relates to an erythritol-containing alcoholic soft sherbet which can be utilized as a soft-ice-cream-like frozen alcoholic beverage; a process for the production thereof; and an aqueous solution to be used as the raw material for the production of the erythritol-containing sherbet. The first invention provides a low-calorie sherbet which exhibits a low hardness in a frozen state even though it contains erythritol, and therefore has a soft texture permitting easy penetration of a spoon even just after it has been taken out of a freezer. The second invention provides an erythritol-containing alcoholic soft sherbet which has a low calorific value, low sweetness and a low sugar content and which can be prepared even in the freezing compartment of a home refrigerator by freezing the above aqueous solution into a soft-ice-cream-like state and can be utilized as a soft-ice-cream-like frozen alcoholic beverage.</p> |
