PROBLEM TO BE SOLVED: To provide a method and device for high moisture containing rice which is made contain 65% of water (equivalent to the level of freshly cooked rice) prior to cooking. SOLUTION: In this manufacture of the highly water absorptive rice provided with a water immersing process 2 for immersing the rice in water and a steam heating process 3 for steam-heating the rice immersed in the water immersing process 2, the rice is steam-heated by steam under reduced pressure for not αing the rice in the steam heating process 3. |
