摘要 <p>PROBLEM TO BE SOLVED: To provide a treatment method for green vegetables capable of maintaining the fresh color tones and good texture of the green vegetables over a long period of time and a process for producing green vegetable-contg. food. SOLUTION: The green vegetables are subjected to a preheating treatment under conditions of 60 to 100 deg.C and 10 second to 15 minutes at the time of subjecting the green vegetables or the green vegetable-contg. food to a heat treatment. The green vegetables are then subjected to an immersion treatment by an alkaline soln. kept at <=40 deg.C. The green vegetables and dark' green vegetable-contg. food subjected to the preheating treatment under the conditions of 60 to 100 deg.C and 10 second to 15 minutes, then to the immersion treatment by the alkaline soln. kept at <=40 deg.C are packed and hermetically sealed into a vessel under a sterile atmosphere.</p>
