New food additive for use as an inhibitor of melanosis formation in crustaceans, which consists in the homogenization of a mixture made up of 110 grams of sodium bisulphite 1, 20 grams of ascorbic acid 2, 50 grams of citric acid 3 and 820 grams of sodium chloride or common salt 4, subsequently being hermetically packaged.
