PROBLEM TO BE SOLVED: To prepare a basil paste having all of a color, a taste and a flavor closely resembling those of a raw basil without deteriorating during the distribution by hermetically sealing and cooking a paste comprising a shredded raw basil, common salt and oils and fats in an airtight container. SOLUTION: A basil paste filled in a container is prepared by hermetically sealing and cooking a paste comprising common salt in an amount of 3-50 pts.wt. based on 100 pts.wt. raw basil shredded to 1-6mm<2> size and further oils and fats such as soybean oil, rapeseed oil, sunflower oil, olive oil, lard or a refined fish oil (preferably the olive oil) in an airtight container. The resultant basil paste is capable of assuming a bright green color and favorable for an appearance. |
