PROBLEM TO BE SOLVED: To obtain a low-salt noodle having palatability superior to noodles prepared by the single use of table salt by using a gluconic acid alkali metal salt singly or in combination with table salt. SOLUTION: Noodle dough containing a gluconic acid alkali metal salt (potassium gluconate, sodium gluconate, etc.) singly or in combination with table salt is kneaded, rolled, slit and boiled. The amount of the alkali metal gluconate is nearly equal to that of table salt in conventional noodle in the case of the single use of the gluconate. The weight ratio of the alkali metal gluconate to the table salt is 10:90 to 99:1 in the case of using the gluconate in combination with the table salt. |
