PROBLEM TO BE SOLVED: To provide a method for producing brewage, stabilizing the brewage such as malt beverage, e.g. beer, especially preventing the deterioration of the brewage due to the oxidation of flavor, without adding a lactone, a bisulfite salt, etc., by adding tea leaves or their extract to the brewage during its brewing process. SOLUTION: In this method for producing a brewage, a characteristic comprises adding the leaves of a tea such as Camellia sinensis or their extract preferably in amount of 50-6500g converted in terms of the tea leaves per barrel of the brewage at least in one process selected from a raw material-mixing process, a boiling process and a fermentation process in the brewing process. |
