The barbecue grill comprises two cone shaped charcoal trays which project heat flow toward the food. Saw teeth holes in the trays' top part are contiguous with the water tray and encourage the heat flow towards the water tray and boiling the water to produce steam. Two lateral truncated faces (6) complete the convergence and concentration of the heat and steam flow to the centre of the barbecue where the removable grills (14) supporting the food are located. Runners and stops enable rigorous and systematic positioning of the grills. Grease falling from the grills and the runners falls exclusively into the grease tray (13).
