The present invention relates to a process for producing sourdough comprising at least an acid sensitive compound and other sourdough ingredients, said process comprising: (i) preparing an unfermented sourdough from at least an acid generating compound providing the acidic taste or (a) the sourdough or (b) a product baked from this sourdough, without causing substantial inhibition of the acid sensitive compound present in the sourdough, and other sourdough ingredients; and (ii) fermenting the unfermented sourdough. |
