PROBLEM TO BE SOLVED: To produce an emulsifying agent low in viscosity, having a characteristic excellent in workability and capable of stabilizing emulsification over a long period of time by hydrolyzing a water soluble soybean hemicellulose with a purified rhamnogalacturonase. SOLUTION: The water soluble soybean hemicellulose is dissolved into 20mM acetic acid buffer liq. (pH5.0) so that a concn. may be 5%, and prepared purified rhamnogalacturonase is added by 1/10 of the water soluble soybean hemicellulose, and the hemicellulose is decomposed at 40 deg.C while stirring for 24hr. After subjecting the hemicellulose to enzyme decomposition, the enzyme is deactivated by heat-treating at 90 deg.C for 5min, and the decomposed matter is centrifuged (5000G, 10min) to separate a water soluble fraction containing enzyme decomposition water soluble soybean hemicellulose. The enzyme decomposition water soluble soybean hemicellulose obtained by this way is transferred to a cellophane tube, and after dialyzing and desalting, the matter is dried to obtain the enzyme decomposition water soluble soybean hemicellulose. |
