PROBLEM TO BE SOLVED: To obtain a tangle processed food with no crumbling even if boiled, good in appearance, by rolling a specified raw frozen meat as core with a cut tangle treated with acetic acid followed by binding the resultant roll with a string material. SOLUTION: A piece of raw frozen meat 1 of e.g. fish meat such as of herring or salmon prepared 5-50% longer than the cut width (20-100mm) of a tangle 2 cut and treated with acetic acid is rolled as core with the tangle 2 so as to project equal length of meat from both ends of the roll width of the tangle 2 when rolled, and the resultant roll is bound with a string material such as dried gourd shavings (Kanpyo) 3 followed by, if needed, cutting both ends of the tangle 2 even into a rolled tangle material, which is then boiled to obtain the objective tangle processed food. It is preferable that the above rolled tangle material is boiled briefly and then soaked in an aqueous calcium salt solution. |
