PROBLEM TO BE SOLVED: To provide a method for keeping physiologically active substances, e.g. chroman or the like contained in a fruiting body of Hericium erinoceum, by preserving it after deactivating an enzyme contained in the collected fruiting bodies of Hericum erinoceum with heat. SOLUTION: This preservation treatment is carried out by heat-deactivating an enzyme contained in collected fruiting bodies of Hericium erinoceum. The deactivation treatment for enzyme is preferably carried out immediately after the fruiting bodies are collected. In more details, the deactivation treatment for enzyme is preferably carried out by treating it with heat under pressure in a state that the fruiting body of Hericum erinoceum is immersed in hot water in the pH range 4.5-6.5 at 95-121 deg.C for 10min. As the preservation treatment, e.g. drying, salting and packing in a vessel are illustrated. |
