PROBLEM TO BE SOLVED: To obtain an N-long chain-acylamino acid salt of high quality which is very useful as a surfactant of low irritation from inexpensive raw materials with industrial advantage by heating an aqueous solution containing a specific amidedinitrile and a specific basic substance. SOLUTION: An aqueous solution containing (A) an amidedinitrile of formula I (R is a 7-21 C hydrocarbon) and (B) a basic substance, for example, sodium hydroxide is heated to prepare an aqueous solution containing an amidenitrile of formula II, in addition, this aqueous solution is further heated to hydrolyze the compound of formula II in the presence of the component (B) to prepare the objective salt of formula III [M is a cation originating from the component (B)]. The component A is preferably prepared by reaction of an iminodinitrile of formula IV with a fatty acid halide of formula V (X is a halogen atom) in the presence the component B. |
