PROBLEM TO BE SOLVED: To produce cellulose type substances in a high yield and at a low cost, by a method which comprises culturing a cellulose-producing bacteria in a medium containing levanase, to thereby produce cellulose type substances and accumulate them in the medium, followed by recovering them. SOLUTION: Levanase which is produced by a Bacillus or an Arthrobacter is added to a culture mediunm which contains sucrose as a carbon source, and additionally glucose, fructose or the like, if desired; ammonium sulfate, ammonium phosphate, urea or the like as a nitrogen source; and a magnesium salt, calcium salt and the like as inorganic salts. A cellulose producing bacteria (for example, Acetobacter xylinum ATCC23768) is cultured in this medium containing levanase, so that cellulose type substances are produced and accumulated in the medium. The cellulose type substances are recovered from the resultant culture. By virtue of the addition of levanase to the medium according to this method, it becomes possible that the accumulation of levan is suppressed and an improved yield of cellulose type substances is achieved. |
