2.1. Enzymatic reactions are sometimes adversely affected by water, for example water added to the reaction mixture may hydrolyse the reaction product or, for example in the case of a condensation reaction, the equilibrium may be shifted towards the starting materials. In reactions of these types, the water is usually replaced by a solvent which, however, interacts with the enzyme and thereby frequently alters the latter in an unfavourable way. Hydrolytic side reactions are to be substantially avoided in the disclosed process. 2.2. In a water-assisted enzymatic reaction, the substrate and the enzyme are present in solid phase with either the water not forming a liquid continuum around the substrate and enzyme or the water acting at least partially from the gas phase, or the water required for the reaction being added via a solid, or at least part of the water required for the reaction being transferred by solid contacts, or a combination of the possibilities. The reaction mixture can be mixed by ultrasound or turbulence, for example in a fluidised bed. 2.3. Preparation of peptides. |
