USE:A raw material for synthesis of an antioxidant, a reagent for research of saccharometabolism and a raw material for synthesis of an optically active compound. PREPARATION:A bacterium belonging to genus Pseudogluconobacter capable of oxidizing L-sorbose, 2-keto-L-gulonic acid or 5-keto-D-gluconic acid to 2-keto- L-gularic acid [example; Pseudogluconobacter saccharoketogenes K-591s (IFO 14464, FERM P-8481), etc.] is brought into contact with L-sorbose, 2-keto-L- gulonic acid or 5-keto-D-gluconic acid. |
