PROBLEM TO BE SOLVED: To provide a method for storing balloonfish, capable of storing fresh balloonfish in a state in which freshness is kept over about one or more month and eating as sliced raw fish after storage. SOLUTION: Fresh balloonfish, from which organs and skin are removed, having head, underjaw, bone, tail, etc., is washed with water and water content of the surface is swept away and the balloonfish is packed under high vacuum by using a high barrier film and stored in non-freezing state at -1.0 deg.C to -1.5 deg.C. The vacuum packing is preferably carried out in a state in which a sheet for drip absorption is sealed or under <=1×10<-3> mmHg vacuum degree.
