Non-human transgenic mammals, adult females of which express proteinaceous substances of interest in their milk, contain in their genetic material a DNA construct comprising DNA encoding the substance of interest and DNA from a milk whey protein gene to direct expression of the substance of interest in the mammary gland. The substance of interest may be harvested from the milk of the adult female mammals. The milk whey protein gene may be beta -lactoglobulin.
