<p>The invention relates to a method for the oxidation of starches or starch derivatives with ozone in an aqueous medium, wherein at least a part of the primary hydroxyl groups are selectively oxidized. In particular, root starches, such as tapioca starch, tuber starches, such as potato starch, and waxy cereal starches, such as waxy maize starch, are treated using the method according to the invention.</p> |
