Machine for removing roe sacks where fish are laid inside compartments on an endless belt and interact with the fingers on a second endless belt, is new. A machine for removing the roe sacks from fish which have had their heads removed comprises: (a) an endless belt for transporting the fish sideways-on inside compartments with the headless ends of the fish all facing in the same direction; and (b) a second endless belt that runs at right angles above the first belt and is provided with a number of fingers that will press against the stomach side of the fish, starting from the rear end and moving towards the headless end of the fish. The machine is particularly suitable for extracting caviar. Roe sacks are removed using an automated process that has a higher guaranteed roe sack removal and utilises less complicated roe sack removal fingers.
