PURPOSE:To enable to rapidly, continuously and uniformly heat a flowable food, etc., by applying an electric current to the food itself for its direct heating with Joule heat. CONSTITUTION:A material received in a raw material tank 13 is continuously transferred into a Joule-heating unit 19 with a pump 15 connected to the raw material tank 13. The material to be heated is flowed, and simultaneously heated in the Joule heating unit 19. Since cold water is flowed in electrodes in which the electric current is flowed not to heat the electrodes themselves, the electric heating of the electrodes can be prevented to uniformly heat the material. After the heating is finished, the heated material in a piping 49 is flowed and simultaneously cooled in cooling sections 53, 57, and subsequently received in a product tank 63. |
