Fat-based aqueous emulsion products having a fat content of 10-95 % by weight comprising oxidation-sensitive fats/-oils and conventional additions, including optionally conventional antioxidants and emulsifiers, are admixed with a combination of citrate and lecithin in amounts which protect the product effectively against metal-catalyzed oxidation. The products are normally to contain 0.01-1 % by weight of citrate calculated as citric acid and 0.01-1 % by weight of lecithin, and the agents are preferably added to the aqueous part prior to the emulsification. The combination of citrate and lecithin serves as an effective metal chelator and can particularly replace EDTA which has previously been used as a metal chelator in such emulsion products. |
