PURPOSE:To make a control of salt water concentration easy by arranging pumps in both pipings connecting a kneader with a water storage tank and a salt water tank respectively and by controlling operations of both pumps in accordance with supply amount and salt concentration of a knead water. CONSTITUTION:As suitable values for hydration factor and salt concentration of a knead water supplied to a kneader 1 are prescribed for every raw powder such as wheat flour, buckwheat flour, etc., flow rates of pumps 25, 26 are calculated based on every data and numbers of revolution of their respective motors are decided by a control unit. It is possible, therefore, to supply water in a water storage tank 22 and salt water in a salt water tank 24 to the kneader 1 by driving the first pump 25 and the second pump 26 respectively so that a knead water has a prescribed supply amount and a prescribed salt concentration. It is possible to knead buckwheat noodle by driving the first pump 25 alone to supply the water in the water storage tank 22 alone as a knead water, and also to knead wheat noodle and buckwheat noodle successively. |
