Process for the production of sophorolipids from sugars and oil using deenergized cells of Candida bombicola Sophorolipids are molecules having surfactant properties formed by the combination of a sugar (sophorose) with a lipid chain. These compounds are synthesized by certain micro-organisms, including the yeast Candida bombicola, the one which produces them in the greatest quantity. In this work a process capable of substantially increasing the quantity of sophorolipids synthesized by this yeast in comparison with those described in the literature has been developed, the patented process being based on the use of cells of Candida bombicola in a deenergized state, that is when they are in the stationary stage in their growth, and using optimized growth and production media.
