Process for the elimination from fermenting organic material of H2S, mercaptans, NH3 and organic compounds (e.g. amines and fatty acids) in two stages comprises: (a) transformation of mercaptans to disulphides and H2S to sulphides in the presence of air and a catalyst, by bubbling air through the liquid medium containing KOH, lime, NaOH, LiOH or a carbonate of these bases; and (b) catalytic combustion of the air-entrained organic compounds including ammonia and light amines.
