PROBLEM TO BE SOLVED: To provide an unglazed rice cracker using bean-curd refuse with which a nutritive value is increased, the feel of crunch is strengthened and the feel of eating, taste and preservability is improved by letting any specified material flow into a metallic concave die, pressing a convex die, heating these dies and baking them. SOLUTION: Flour is added to the bean-curd refuse having the raw material mixture ratio of 10% and kneaded/stirred, and the moisture of bean-curd refuse is removed.
