PROBLEM TO BE SOLVED: To obtain an unconventionally new MISO food with high commodity value by making use of buckwheat leaves having medicinal ingredient(s) to food. SOLUTION: Buckwheat leaves plucked at the time when the flower buds begin to sprout are incorporated with koji MISO in an amount smaller than that of the leaves followed by thoroughly crushed and mixed once. Thereafter, the rest of the koji MISO is added to the above mixture so that the weight ratio of the koji MISO to buckwheat leaves comes to (10:3) followed by further mixing and crushing, thus affording the objective MISO food. |
