PROBLEM TO BE SOLVED: To prepare red pepper noodles enabling the intake of large amounts of vitamins A and C, effective for warming the body and promoting the blood flow and having excellent taste and flavor by kneading wheat flour, red pepper powder, salt, grated garlic, egg and KANSUI (an alkaline aqueous solution containing potassium carbonate) at specific ratios. SOLUTION: The objective noodle is produced by kneading 100 pts.wt. of wheat flour with 2.5-10 pts.wt. of red pepper powder, 0.8-1.5 pts.wt. of salt, 1-2 pts.wt. of grated garlic, 1/2 to one egg and 10-30cc of KANSUI. Preferably, the red pepper powder is dissolved in water, eggs, KANSUI, salt and grated garlic are mixed into the solution and the obtained mixture is slowly added to the wheat flour. |
