PROBLEM TO BE SOLVED: To provide fluted noodle string produced by extrusion molding, effective for preventing the agglutination of noodle strings in boiling and shortening the cooking time and almost completely closing the flute by thermal cooking. SOLUTION: This noodle has a single flute 2 along the longitudinal direction of the noodle string 1. The cross-section of the flute 2 has a wedge form incised toward the center. The angle of the wedge is 20-55 deg., the depth of the flute is 1/2 to 3/4 of the diameter of the noodle and the area of the flute part 2 is 2-35% of the imaginary cross-sectional area of the noodle string 1. The extrusion-molded noodle composed of noodle string having a round imaginary cross-section has horizontal cut faces on both sides of the flute 2. The width of the horizontal cut face is longer than 75% of the opening width of the flute 2. |
