PROBLEM TO BE SOLVED: To obtain a glue for rolled food products such as egg roll or vinegared rice rolled in dried laver which can surely and stably glue the coating ingredient. SOLUTION: This glue is prepared by stirring the materials containing egg white and polysaccharide as a thickener, until they are foamed. The polysaccharide thickener is selected from the group of xanthan gum, guar gum, Locust bean gum, tragacanth gum, carageenan, pullulan, curdlan, alginic salt and CMC. Particularly, dried egg white is mixed with xanthan gum in an amount of 1-30wt.% based on the dried egg white. |
